Vinification

It is destemmed, cold macerated and gently pressed in the cellar located in the center of the estate itself, avoiding contact with oxygen from the air in all fermentation operations.

Ageing

12 months in new French oak barrels without toasting (steam tamed), where the periodic suspension is carried out on lees (battonage), to maintain the fruitiness, complexity, smoothness and longevity of the wine.
