VINTAGE 2006 : Rated as VERY GOOD the 2006 harvest brought abundant rain in winter which, together with the good spring weather, resulted in high fertility. Early summer brought some showers and August and early September were hot and sunny, just perfect in order to get rid of any humidity related problem, and marked by cool nights, which really helped the phenolic ripening of the vines. GRAPE VARIETIES : Tempranillo 100% coming from vineyards with high sun exposure from the 3 subregions. AVERAGE YIELD : 45 Hl./Ha. VINIFICATION : Grapes are cooled down upon reception and then the must goes through a pre-fermentative maceration for 3 days. Long and slow Alcoholic fermentation continues at 25ºC with short skin maceration. AGEING : Aged for 12 months in American white oak (Quercus Alba) barriques of 225 litres capacity, medium toasted and previously dried for two years. Then the wine has been aged in bottle in our facilities for 1-3 months before reaching the market. TASTING NOTES : Red ruby colour, harmonic, well balanced and mature. Cherries, plums and strawberry in the nose, wrapped in subtle vanilla and fine wood. SERVING SUGGESTIONS : Serving temperature: 16ºC-18ºC (61ºF-65ºF). Perfect with white meat, pasta, bacalao (depending on type and sauce), veal, chorizo and light cheeses.
