The harvesting date is determined by the grape ripeness (alcoholic and phenolic), taking account of the calendar, the weather forecast and the various grape quality parameters such as sugar concentration, acidity and grape condition.

On our own estates, the grapes are harvested and carefully taken to the winery in 350 kg boxes in order to maintain the berries in optimum condition. Once at the winery, in addition to the inspection made by the Wine Board inspectors, the grapes are further analysed for ripeness and lack of disease, followed by a meticulous visual inspection to ensure that nothing but the best grapes are selected.

Once the grapes have been certified as meeting the required quality standards, they are taken to the hoppers which have now replaced the former stone presses as containers for the grapes on their arrival at the winery. The de-stemmer is fitted with a worm style auger which serves to separate the grape berries from the stems.

The actual process to convert the grapes into wine can then begin. A miracle performed by Dionysus or Bacchus, the respective gods of wine of the Greeks and Romans, who were responsible for introducing winemaking and wine consumption into the Spanish peninsula. We shall now go on to describe the vinification process, which varies according to the type of wine to be made.

Red wine vinification.

Our red wines are made from the principal autochthonous variety grown in La Rioja, namely the Tempranillo, blended in some cases with the Garnacha and Graciano.

The grape berries obtained from the de-stemming process then undergo a crushing process in which the grapes are pressed in order to extract the juices or must. At El Coto de Rioja, we use crushers with natural rubber rollers that exert just the right amount of pressure to extract the grape must without excessively damaging the berries or crushing the pips.

The next step is to take the paste (solids and grape must) to the fermentation vats.

We have two wine-making buildings equipped with temperature-controlled, stainless steel vats. However, for some of our wines, we still use the first tanks to be installed at our Bodega, made of epoxy-coated concrete.

It is in these tanks where the magic of the alcoholic fermentation takes place, a process in which the yeast starts to act on the sugars present in the grape must in order to convert it into alcohol, releasing heat and carbon dioxide and the aromas characteristic of the process. Control of the temperature (in our case it never exceeds 28 ºC) and oxygen are key factors in the fermentation process, which can take as long as 10 days in the case of red wine.

Maceration is the next step in the process, consisting in maintaining the grape must in contact with the grape skins or solids in order to extract the colour pigments (the anthocyanins from the skins) and aromas. This is a key part in the red wine making process, although an excessive amount of time can entail sacrificing fruit for colour. Maceration can be prolonged for up to two weeks beyond the end of the alcoholic fermentation and different techniques can also be applied such as Remontage (a French word meaning pump-over, in which the grape must is pumped up from the bottom of the vat to punch the cap of grape solids formed at the top). Another process is Délestage or lightening whereby the grape juice is drained out and then returned to the vat, over the grape solids, with the pressure of the liquid increasing the colour and flavour extraction process. However, most importantly of all, each tank is processed individually, and here the laboratory and wine tasting are essential.

Devatting follows maceration, in order to separate the wine from the grape solids. This paste is then passed through pneumatic presses, governed by selective pressure cycles, to extract the wine. This press wine has a higher tannin content and can be useful in strengthening some wines for subsequent barrel ageing.

The wine then undergoes a micro-oxygenation process in order to stabilise its colour and round of the tannins. It is now ready for secondary or malolactic fermentation.

White vinification.

Our white wines are principally made from the Viura variety. A variety with a high degree of acidity, a marked fruity flavour and certain floral notes which confirm it as the preferred variety with the Rioja Designation of Origin.

In order to extract the full potential from the grapes, whilst preserving the fine, delicate aroma, the grapes are subject to a brief cold maceration process in an oxygen-free atmosphere. In order to achieve a dual cooling and inerting effect, we use an innovative system by means of which the grapes are cooled by injecting liquid C02 just after the de-stemming process and before entering the fermentation vat, thereby rapidly reducing the temperature and avoiding stressing the grapes.

The grape juices ferment at a temperature of between 14 to 16 ºC, which lengthens the fermentation process for up to 14 days. Once the alcoholic fermentation process has finalised, the wine is maintained at low temperatures until ready for bottling.

Rosé vinification.

Our rosé wine is made from the Tempranillo and Garnacha red wine varieties.

To maximise the aromatic potential of the rosé wine, the grapes are subjected to a brief, cold maceration process in an oxygen-free atmosphere. This process gives its name to the wine given the fact that, in the period in which the must is in contact with the grape solids, it acquires its characteristic pinkish colour, it "turns pink".

Once the desired colour has been obtained, the grape must is bled off. To achieve a dual cooling and inerting effect, the grapes are cooled with liquid Co2, thereby quickly reducing the temperature and preventing the evaporation of the fruit aromas which are so characteristic of our rosé wines.

The grape must, separated from the solids, ferments at a temperature of between 14 to 16 ºC, which, like the white wines, lengthens the fermentation process and the wine is also maintained at low temperatures until ready for bottling.

Wine ageing

crianza.

1. f. Action and effect of child rearing, particularly mothers or wet nurses during breast feeding.

2. f. Period of lactation.

3. f. Wine making process.

The notion of wine ageing (crianza), in its widest sense, refers to the controlled barrel or bottle ageing process at the winery. It is therefore particularly limited to red wines. Although there are some white wines that are also aged, these are the exception to the rule. One cannot help thinking of the parallelism that gave rise to the word, a reflection of the love and care shown by the Bodega owners to their wines, and a fundamental characteristic of Rioja wines after the introduction of the French vinification methods during the second half of the 19th century.

And the fact is that the wine, which on many occasions is referred to as a living being, perhaps due to its changing nature and the care required, sleeps in 225 litre oak barrels (the so-called Bordeaux barrel is the only one authorised for the D.O.Ca Rioja designation of origin) for as long as is required.

Our Crianza wines currently remain at least more than one year in barrels, before being fined in bottles for some eight months. Reserva wines are barrel aged for almost two years and a further two years in bottles whilst Gran Reserva wines are aged for more than 5 years in barrels and bottles, with at least two years in barrels.

During the time spent in the barrel, the wine aromas and colours are enhanced by the oak, before the wine is then polished and rounded in the bottle.

At El Coto de Rioja, all our red wines are aged in oak barrels. Due to the wide market acceptance of our wines, our stock of barrels has become one of the greatest in the D.O.Ca designation of origin. In addition to currently having a stock of some 70,000 barrels, we are also aware of the importance of using new oak. For this reason the average time of utilisation is just over 3 years.

All our wine-ageing cellars are duly climate controlled in order to guarantee correct wine ageing and conservation.

';CONSTANTES['FRASE_4_VINOS']='';CONSTANTES['CLASE_4_VINOS']='historia';CONSTANTES['FOTOS_4_VINOS']='fotoA1.jpg,fotoA2.jpg,fotoA3.jpg,fotoA4.jpg,fotoA5.jpg,fotoA6.jpg,fotoA7.jpg,fotoA8.jpg,fotoA9.jpg,fotoA10.jpg';CONSTANTES['ALTS_4_VINOS']='Labraza,Abriendo calles,Aclareo de Racimos,Cenicero,Cenicero,Selección Cinta,Selección en cinta,Remontando,Nave de elaboración,Sala de barricas';CONSTANTES['PDF_BODEGA_1']='historia_en.pdf';CONSTANTES['PDF_BODEGA_2']='actualidad_en.pdf';CONSTANTES['PDF_BODEGA_3']='calidad_en.pdf';CONSTANTES['PDF_BODEGA_4']='';CONSTANTES['TIT_BODEGA_1']='History';CONSTANTES['DESC_BODEGA_1']='El Coto de Rioja :: Winery :: History';CONSTANTES['KEYS_EXTRA_BODEGA_1']=', warehouse, history';CONSTANTES['TIT_BODEGA_2']='Coto de Rioja today';CONSTANTES['DESC_BODEGA_2']='El Coto de Rioja :: Winery :: Coto de Rioja today';CONSTANTES['KEYS_EXTRA_BODEGA_2']=', warehouse, today';CONSTANTES['TIT_BODEGA_3']='Quality';CONSTANTES['DESC_BODEGA_3']='El Coto de Rioja :: Winery :: Quality';CONSTANTES['KEYS_EXTRA_BODEGA_3']=', warehouse, Quality';CONSTANTES['TIT_BODEGA_4']='Location and contact';CONSTANTES['DESC_BODEGA_4']='El Coto de Rioja :: Winery :: Location and contact';CONSTANTES['KEYS_EXTRA_BODEGA_4']=', warehouse, Contact, form, contact form';CONSTANTES['MENU_BODEGA_1']='HISTORY';CONSTANTES['MENU_BODEGA_2']='COTO DE RIOJA TODAY';CONSTANTES['MENU_BODEGA_3']='QUALITY';CONSTANTES['MENU_BODEGA_4']='LOCATION AND CONTACT';CONSTANTES['MENU_BODEGA_1_LINK']='history';CONSTANTES['MENU_BODEGA_2_LINK']='today';CONSTANTES['MENU_BODEGA_3_LINK']='quality';CONSTANTES['MENU_BODEGA_4_LINK']='location';CONSTANTES['MENU_BODEGA_1_LINK_ES']='historia';CONSTANTES['MENU_BODEGA_2_LINK_ES']='actualidad';CONSTANTES['MENU_BODEGA_3_LINK_ES']='calidad';CONSTANTES['MENU_BODEGA_4_LINK_ES']='localizacion';CONSTANTES['TITULAR_1_BODEGA']='HISTORY';CONSTANTES['TXT_1_BODEGA']='Under the auspices of the industrial bank Bankunión, the El Coto de Rioja winery was founded in 1970 by a group of experts with recognised experience in the wine sector. It took almost 5 years to release the first vintage onto the market, once the wine has reached an optimum stage of maturity, a vintage that made a big impact on Rioja wine enthusiasts.

1978 is another milestone in the history of the Bodega, marking the date when Eduardo Santos Ruiz, a young Bankunión director, took up the management of the winery. We are now going to provide a brief description of the general features of each soil type and how they contribute to the character of the wine (although in actual fact soil is but one of a long series of factors that combine to give the wine its personality, and here it is simplified for didactic purposes):

- Limestone clay. This is the red ochre soil of villages such as Oyón, where El Coto is located, and also Laguardia, San Vicente de la Sonsierra, Ábalos and Haro. It accounts for 25% of La Rioja and is predominant on the north bank of the river Ebro (Rioja Alavesa, Sonsierra and other Northern parts of Rioja Alta). Due to their proximity to the mountains, the plots of land are smaller and steeper. This soil gives the wine good acidity and extract, something that is essential in the wine ageing process, glycerides, with structure and colour.

- Ferrous clay. This is the reddish brown soil that is particularly predominant in Nájera and along the Najerilla river banks, in Rioja Alta. Soil with a high concentration of iron which gives the wine a mineral content. Fresh red wines with more body.

- Alluvial. This soil is to be found in most of the D.O.Ca of La Rioja, accounting for practically 50% of the total surface area, stretching along the river banks and containing a large proportion of round stones. Full-bodied wines.

The soil composition has a direct effect on the grape quality. We shall now go on to describe the characteristics of the climate that is specific to each particular sub-region:

- Southern Rioja Alta. This is an area with less precipitation than in the north and with a marked continental influence. Limestone - clay soils in the north alternate with ferrous soils to be found at Fuenmayor, Navarrete or Nájera. The altitude also rises towards the south, which blurs the classification somewhat.

- Rioja Alavesa and Sonsierra. The proximity of the Sierra de Cantabria, serving as a barrier between the Atlantic and continental climates, means that this sub-region is more exposed to the Atlantic climate, a fact which has considerable influence on the acidity of the wines. Less sun implies greater acidity, an essential characteristic for wine ageing. At the same time, the marked contrast between temperatures during the day and night time, as a result of the altitude and its location in the interior of the peninsular, brings aromatic richness to the wines.

- Finally, the Rioja Baja. With the majority of the vineyards at a lower altitude (with notable exceptions, such as some of our estates) and a greater number of sunshine hours, this is the region most influenced by the Mediterranean, providing wines with a high alcohol content and extract. This explains why the Garnacha is the predominant grape, although the Tempranillo also grows perfectly well here. Its name means "the early one" and it is the first red grape variety to ripen. Tempranillo is highly balanced and provides structure, acidity and the flavours of delicious red berries. The aromas of cherries, strawberries, liquorice and orange peel are characteristically present in the Rioja Tempranillo. This grape variety accounts for almost 80% of the vineyard surface area.

- Graciano, the variety that gives the wine its Grace. Traditionally a coupage or blending grape, providing acidity, structure, intense colour and notes of pepper and black berries. As a result of its low yield and poor resistance to disease, this grape variety is not widely used by vine growers, and accounts for the smallest surface area in vineyards. In 2007 it accounted for some 900 hectares, that is 1.43% of the total surface area. For this reason, we ourselves are planting it and it is destined to take on greater importance in our wines in the future.

- Garnacha, the most widely grown Spanish variety in the world, adapts well to the warm, sunny climate of the Ebro valley, where it is more widespread in Rioja Baja. Although it has perhaps a shorter life than other grape varieties, it provides body, fruit (strawberries and raspberries) and alcohol content. It is also the base wine for many rosé wines, such as ours, which is generally a blend of 50% Garnacha.

- Mazuelo (also called Mazuela, Cariñena or Carignan) is only grown in a small area. Occupying scarcely 1680 hectares, it is the third most important red grape variety as far as occupied surface area is concerned, accounting for 2.64% of vineyards, although it is showing a downward trend, being quite sensitive to pests. It provides colour, abundant tannins and sugars.

In addition to the above mentioned grape varieties, there are some other varieties that are now experiencing a revival, such as the Maturana, and other varieties that are being used on an experimental basis, and can also be found in the vineyards of La Rioja.

The white varieties are gradually declining in importance in the Riojan vineyards . At the end of the 17th C, more white then red was produced whilst, looking at a nearer date, such as 1983, it can be seen that white grapes were grown on 7461 hectares, accounting for 20% of the total surface area and, in 2007, they were only grown on 4200 hectares, just 6.64% of the total. There are three traditional varieties in La Rioja: Viura, Garnacha Blanca and Malvasía, to which five more have now been added. Two of which are from La Rioja (Tempranillo Blanco and Maturana Blanca) and a further three are of recognised international prestige (Verdejo, Chardonnay and Sauvignon Blanc).

It is still too early to feel the influence of these new white grape varieties, however they will undoubtedly make it possible to adapt the Rioja wine range to suit new consumer trends.

In our case the Viura (also known as the Macabeo and, therefore, the backbone of the bubbly Spanish Cavas) plays a major role in our only white wine.

Why Viura? Well, it is a refreshing variety, with intense aromas, citrus, floral and green apple notes, balanced, and offers good acidity in the mouth. It has be shown to age well in the barrel, although we have gone for a fresh, fruity style, without the weight of the wood, which can sometimes be overwhelming.';CONSTANTES['FRASE_3_VINEDO']='The traditional red wine varieties in La Rioja are the Tempranillo, Graciano, Garnacha and Mazuelo.
These varieties, combined with our climate, the soil and our expert wine growing practices, give Rioja its special character, the conditions that make it unique and inimitable.';CONSTANTES['CLASE_3_VINEDO']='elclima';CONSTANTES['FOTOS_3_VINEDO']='fotoC2.jpg,fotoC3.jpg,fotoC4.jpg,fotoC5.jpg,fotoC6.jpg,fotoC7.jpg,fotoC1.jpg';CONSTANTES['ALTS_3_VINEDO']='Mazuelo,Graciano,Garnacha,Viura,Garnacha Blanca,Malvasia,Tempranillo';CONSTANTES['TITULAR_4_VINEDO']='D.O.Ca. It is bordered to the north by the Sierra de Cantabria, to the south by the Sierra de la Demanda and the Cameros area, and is open to the east which has a more Mediterranean influence.

Already in 1926, although it is also possible to find much earlier mentions and references to the valley of La Rioja as a wine producing area, there was a drive to create a Wine Regulatory Board to protect and promote the quality and good name of Rioja wines, whilst preventing the counterfeiting of the "Rioja" brand name.

However, for a number of reasons, the Regulatory Board was not actually created until 1953. Later on, in 1970 the Designation of Origin Regulation was approved, giving the Board its present-day structure and functions.

The area is extensive and diverse and for this reason it has been divided into three sub-zones:

- Rioja Alta, or High Rioja, in the northern part of the Designation, except for Rioja Alavesa which stretches along both banks of the river Ebro as far as Logroño.

- Rioja Alavesa, the part of Rioja situated on the north bank of the river Ebro, on the slopes of the Sierra de Cantabria, and which administratively pertains to Alava. Here the land is lower, with a greater Mediterranean influence.

Each zone has its own specific climate and soil, all being excellent for vine growing and for the production of superb quality wines. Rioja wines have traditionally been a blend or coupage of grapes coming from each of the three sub-zones, and which blend together perfectly.

Whilst the traditional styles of wine are still maintained, the present-day Designation of Origin wines reflect market preferences, in the sense that they are showing a greater tendency towards producing wines which portray the specific character of each particular sub-zone.

This is also present to a certain extent in our own range of wines. Whilst the El Coto label is a blend of grapes from all three sub-zones, with a higher percentage of grapes from Rioja Alavesa, Coto de Imaz focuses on Rioja Alta and Coto Real is created from grapes harvested in small plots of land located in Labraza, Yécora and Oyón, with old vine stock and low yields.';CONSTANTES['FRASE_4_VINEDO']='The Rioja Wine Regulatory Board is responsible for protecting and promoting the fine quality and good name of Rioja wines, guaranteeing their authenticity.';CONSTANTES['CLASE_4_VINEDO']='elclima';CONSTANTES['FOTOS_4_VINEDO']='fotoD1.jpg,fotoD2.jpg';CONSTANTES['ALTS_4_VINEDO']='Rioja,Geografic Map';CONSTANTES['TITULAR_5_VINEDO']='OUR VINEYARDS';CONSTANTES['TXT_5_VINEDO']='Traditionally, La Rioja was noted for a certain degree of independence between the various players involved in the Designation of Origin. In this way, the wineries, wine producers and bottlers paid little attention to the vineyards and vine growers (either as independent growers or grouped together in co-operatives) and vice versus.

Today these traditional ways of operating have changed and, in our case, investment in own vineyards has become a priority, for the simple purpose of controlling the process right from the grapevine to the wine glass. Healthy, fine quality, ripe grapes is a sine qua non condition for great wines.

Over the 20th century, the figure of the vine grower or, rather, that of the farmer of old, has gradually faded (with the exodus from rural to urban life, for many, agriculture has become a complementary activity) and this makes it all the more important to professionalise vineyard management. The fact is that our Bodega has had its own vineyards right from the outset, with the planting of our first hectares at Cenicero.

Furthermore, as already mentioned, control over the entire wine-making process, starting at the grapevine, also gives us independence by guaranteeing a stable supply. The process starts with the selection of the plots of land (based on soil type and location), but it also involves using the most modern means available to help combine age-old Riojan traditions with the very latest advances in viticulture:

- Selection of plots, returning vines to their traditional place of growth: on the hill slopes.
- Plantation by GPS, giving the vineyard the best possible orientation.
- Selection of varieties, based on the estate climate and soil conditions, but also following the guidelines set by our own Department of Oenology (this is the case for the Maturana and Graciano varieties, which carry considerable weight in our vineyards).
- Trellis training (wire trained), in order to improve the photosynthesis process by increasing the canopy, raising the grape bunches off the ground and so avoiding problems associated with dampness and preparing the vines for mechanical harvesting.
- Timely attention to vineyard requirements, by our team in order to provide specific care to each and every vineyard, using the best available means.
- Selected low-yielding clones from our own estates, for new plantations.

Thanks to this policy, our vineyard is outstanding, not only for the surface area covered, with more than 500 hectares for the Coto de Rioja, but for many other reasons too: our vineyard of Los Almendros, planted on the hill slopes, is the highest and largest estate in the Rioja designation of Origin; and we have also revived age-old varieties such as the Maturana. Whatever adage is used, the fact is that it is here at the vineyard, where the wine-making process starts.

Los Almendros:
An estate located in Ausejo (Rioja Baja), at an altitude of approximately 460 metres and covering some 300 hectares, making it the largest in the D.O.Ca Rioja. It took us ten years to acquire the small plots adjacent to the original estate, which had an area of just over 100 hectares and was dedicated to almond growing, as denoted by its name (Los Almendros - the almond trees).

This estate, featuring terraces carved into the hill, has more than 100 hectares dedicated to Tempranillo, 100 hectares to Garnacha, and the Graciano and Maturana varieties are also grown. It exemplifies the revival of the mountain viticulture referred to earlier, with 10 hectares of Garnacha planted in the traditional system of terraces.

Carbonera:
The initiative shown by El Coto de Rioja to explore new terrain and climates within La Rioja in order to enhance the wealth of wine styles offered, has recently taken us to CARBONERA, in the municipality of Bergasa, close to Tudelilla, where we have just invested in a new property with 500 hectares of land.

The estate is located at an altitude 0f 700 metres and is an ideal place for planting and growing the new white grape varieties that were recently authorised by the Rioja Wine Board.

Within the next three years at the latest, we expect to have some 200 hectares of vineyards which are certain to provide grapes of an exceptional quality, adding greater aroma and freshness to our white wines.

Cenicero :
“Las XV”, “El Barco”, “Carboneras”, “Valdesalomón”, “Lasanta”, “Matarredo”, “El Chaparral”
The first of our properties, with a total of 100 hectares dedicated to Tempranillo and 4 hectares to Graciano. The oldest vineyards were planted in the sixties, although the majority were planted in the eighties at an altitude of 450 metres in the village of Cenicero, set in the heart of the Rioja Alta.

Logroño-Oyón, Yécora and el Villar de Álava
Scattered across a number of places in the Rioja Alavesa (at Oyón, alongside our Bodega, at Yécora and at Villar de Álava), we have a total of 55 hectares of which 48 are dedicated to Tempranillo and 7 to Graciano. The vineyards are at an altitude of 430 metres at Oyón, reaching 550 metres at Yécora. This low altitude in this part of Rioja Alavesa results in a more Mediterranean influence. All the soils are limestone clay.

In addition to the grapes from our own vineyards, we also need to purchase grapes from other growers and this still accounts for a high percentage of our production. For this reason, our team also advises and supervises the development of our suppliers' vineyards (and in some cases this includes vinification), setting the schedule for activities at the vineyard (pruning, removing the lateral shoots, pest and disease control …) and deciding when the grapes have reached optimum ripeness. Although grapes are acquired from all three sub-regions, the greatest percentage comes from the northern part of the D.O.Ca Rioja. We also use a mathematical formula to set the price of the grapes, in order to ensure that quality is rewarded.

In 2004 the company Viñedos Barón de Ley, S.L. was formed for optimum management of the vineyards coming under the Barón de Ley Group. This company is the owner of all the Group's vine-growing holdings.

And we cannot end this section without mentioning Fernando and José María, our team of agricultural engineers who have made all this possible.
